CAROTENE is extracted mostly from edible vegetable sources. From a nutritional perspective, its valuable as a precursor of Vitamin A and has always played an important role in diets. Many basic foods such as fruits, vegetables and dairy products contain ß-carotene in important proportions.

It is soluble in oil but is also available in dispersible presentations that may be applied in watery mediums, giving yellow-orange hues. It is stable in heat and pH. Instability under light and oxygen may be overcome in some uses by protecting it with ascorbic acid (Vitamin C).

It is recommended for products such as drinks, dairy desserts, bread, margarine, marmalades and cheese.
