CHLOROPHYLL E140 / CHLOROPHYLLIN E141

CHLOROPHYLL is the green pigment found in all plants. The pigment is obtained through alcoholic extraction and its main sources are alfalfa and grass. This pigment is oil-soluble and creates an olive green shade.

CHLOROPHYLLIN is obtained by adding Copper to the Chlorophyll molecule. When chlorophyllin is saponificated with Sodium and Potassium it becomes a compound called Sodium or Potassium Clorofilina Cuprosodica

Available as a liquid and powder, chlorophyll/chlorophyllin are stable in light and heat but may precipitate if applied in acid mediums.

This dye is typically used in sweets, dairy desserts, sauces and dry mixtures.
