LUTEIN is xanthophyll extracted from Tagetes erecta or Marigold, commonly called Cempaxúchitl in Mexico. It provides a bright yellow shade.

From a nutritional perspective, it has been related to a reduction in macular degeneration, thus improving eye-sight and preventing cataract progression.

As is common with carotenoids, it is stable in heat and acid mediums but is susceptible to oxidize. It can be used in drinks, dairy desserts, cheese, snacks, giving its use an added value for being a functional color.
