ANNATO
ANNATTO is extracted from the seeds of the
Bixa Orellana tree, obtaining two pigments; bixin which is soluble in oil and norbixin which is soluble in water.
Both pigments belong to the carotenoid group and therefore can be adversely affected by light and oxygen.
Annatto is stable to heat and provides shades from yellow to reddish through orange.
