PAPRIKA

PAPRIKA is obtained from the red pepper Capsicum annuum. The extract contains mainly two pigments, capsanthin and capsorubin. Both pigments are oil-soluble and provide a reddish-orange tone.

 

It is stable to heat and pH changes. Its main use is in culinary applications such as soups, sauces, pastas, table oils and fats, meat; but it can also be applied in drinks, dairy desserts and cheeses.
