ANTHOCYANINS

ANTHOCYANINS are found in a variety of fruits and vegetables, they are the pigments that give the characteristic red, purple, and blue colors.

 

Anthocyanin pigments are anthocyanidin glucosides and belong to the group of flavonoids. In addition to being food colorants, they have antioxidant and therapeutic properties, making them a functional colorant, adding value to the foods that contain them.

 

They are stable to light, heat, and acidic pH, and can be obtained from various sources such as grape skin and black carrot.
