BLUES

The GENIPA AMERICANA, also known as Jagua, is a tropical fruit that contains the pigment genipin. This pigment is found in the fruit's dark juice and is responsible for giving it a dark blue tone.

SPIRULINA is a blue-green unicellular algae, considered a superfood due to its high protein, vitamin, and mineral content. One of the pigments extracted from spirulina is phycocyanin, which is responsible for its characteristic vibrant blue color. When working with spirulina, it is important to consider its stability at different pH levels and temperatures.
