ANTHOCYANINS are red, purple and blue pigments that provide color to various fruits and edible berries, and several vegetables and flowers.

Anthocyanin pigments are glycosides of anthocyanidins and belong to the group of flavonoids. Besides being food dyes they have antioxidant and therapeutic properties, which make them a functional dye, thus adding value to the food they color.

They are stable in light, heat and pH acids under 4. Anthocyanins are base acids, so they acquire orange or red hues in acid pH, purple shades in neutral pH and purple to blue hues in alkaline pH.

Anthocyanins are recommended for dairy, sweets and drinks.
