COCHINEAL, CARMINIC ACID, CARMINE E120

CARMINIC ACID is the red dye extracted from the cochineal Dactylopius coccus. It is a stable, water-soluble pigment which under acid conditions has an orange shade.

CARMINE has a stable, bright red color that isnt affected by oxygen, light or heat. It may precipitate in acid conditions.

Both pigments are mostly used in cosmetics and food. It may be applied to gelatins, pastries, marmalades, dairy products, meat, ice-cream and sweets.
